Whether it’s salad, noodles, cupcakes, or chilled oatmeal, loads of deliciousness is being crammed into jars of all sizes. Why not do it? It’s convenient, aesthetically pleasing, simple, made ahead, and most of all…portable. That is why I do it!
As you may have seen in my most recent blog postings, I’ve returned to my full time job. Leaving before 7:00 am every morning, leaves me with no time for breakfast at home, making it difficult to eat healthy. What I started doing is making this strawberry + banana chilled oatmeal at night so I can take it to work the next day. I’ve even made extras to share with my favorite co-workers. So easy, delicious, portable and ready to eat.
Preferring bananas and strawberries in my oatmeal, you can easily create your own chilled oatmeal by trying different flavored yogurts such as strawberry or peach, adding in a variety of fruit, such as blueberries, chopped or grated apple, or raspberries. Load up on what’s fresh and in season. Even try adding some chopped almonds, sunflower seeds, or even dried cherries for extra pizzaz. Your options are limitless.
Don’t have a cute little mason jar? No worries, a container with a lid works perfectly. Maybe not as cute and adorning, but just as delicious and nutritious. Oh yeah, those chia seeds are going to keep your stomach full until lunch time.
Printstrawberry + banana chilled oatmeal
Ingredients
- 1 cup organic vanilla yogurt
- 2 tablespoons almond milk
- 1/2 teaspoon honey or pure maple syrup
- 1/4 cup old fashioned gluten-free or regular rolled oats (dry)
- 1 teaspoon chia seeds
- 1/4 cup sliced fresh strawberries
- 1/4 cup fresh banana slices
Instructions
- In a 8oz mason jar or any other container, add yogurt, milk, honey, oats and chia seeds. Use a table knife to mix everything together, gently and thoroughly.
- Add half of the strawberries and banana slices and gently mix them into the oatmeal mixture.
- Top with the remaining fruit. Cover and refrigerate overnight.
- The next morning, remove the lid and enjoy!
