It has only been 2 weeks thus far, but I’ve realized that I’m a total snack-a-holic and am finding it difficult to maintain a healthy snacking routine while at work. However, just the other day, I had an aha moment! I recalled doing a photo shoot, over the summer, for a friend, Karen Nation, who was launching a no bake mix for protein bars, called Creation Nation. Those protein bars were super moist, sweet, and delicious. Plus, they were so easy and quick to make. No baking, no waiting. Simply add the powder mix to a bowl, then throw in some of your favorite ingredients, such as honey, agave, nut butter, coconut oil, or mashed bananas, then stir and shape into bars, balls, or bites….so many creative possibilities. My favorite is the Chunky Monkey Bars. I love the added chocolate chips, banana, and nut butter. You can find the recipe below or on Creation Nation’s recipe page. I decided to order a variety of mixes, make them at home and take them to work. This way I can have myself a healthy, all-natural, energy packed snack anytime during the day.

Ingredients
- Vegan Protein Bar Mix – Peas Love & Chocolate
- 1 Cup mashed Bananas (@ 3 medium to large bananas)
- 1/4 to 1/3 Cup Chunky Nut Butter
- 2 T Agave (optional)
Instructions
- Mix in a medium-sized bowl with a fork. C’mon muscles!
- Then with your hands, roll bite-sized balls. Or with a spatula, press into a square container and cut 8 bars. ENJOY!
