So far this summer, quinoa-oatmeal with coconut milk and maple syrup has been my favorite breakfast. It’s creamy, filling, and healthy, plus the maple syrup adds just the right amount of sweetness, naturally. And I have a confession…I absolutely love the way that the quinoa kernels pops between my teeth. Don’t you?
Surprisingly, it has been over a month since I have posted on this blog. This summer has been so busy for me. If you follow me on Iinstagram, you would know that my family and I have just returned from Hawaii, plus we have been spending a lot of time on our boat. There is just so much going on that I have had to put my blog on the back burner. Today, I’m so happy to be back to cooking and blogging.
Oh yeah, I have another confession…so far this summer I’ve auditioned for two reality TV shows. I’m not looking to be on a reality show – the opportunity presented itself to me. It was exciting to audition for these shows, but the right one hasn’t come along for me…yet. #housewives #howaboutacookingshow

Quinoa-Oatmeal with Coconut Milk + Maple Syrup

Recipe from the Malibu Farm Cookbook
Ingredients
- 1 cup well-rinsed quinoa
- 1 cup old fashioned rolled oats
- 1 teaspoon kosher salt
- Coconut milk
- Maple Syrup
- Fresh berries
- Nuts
- Dried berries
Instructions
- In a large saucepan, add quinoa, oats, salt, and 8 cups of water. Bring to a boil, then simmer for 20 minutes or until the oatmeal is soft and most of the water is gone.
- Serve with coconut milk, maple syrup, and toppings of your choice.
