Acai bowls are like having ice cream with toppings for breakfast which makes it a perfect breakfast during these hot summer months. Today, I’m so proud of myself for making my acai from scratch. I didn’t purchase pre-made frozen acai packets or cartons. Instead, I used an acai powder from Navitas Naturals, blending in frozen bananas, blueberries, blackberries, almond milk, and some vanilla. Açaí powder is notably rich in dietary fiber, calcium, iron and vitamin E. Before making your acai, be sure to freeze your fruit, otherwise you will end up with juice. In fact, I stocked up on bags of frozen organic fruit so I can make acai bowls at any time of the day. I’m not a fan of the tiny seeds in blackberries, however using my powerful Ninja blender, I was able to get most of the seeds from the blackberries ground up. I suggest setting your blender on high if your like me, and don’t like getting seeds stuck in your teeth. My toppings of choice are always some great tasting granola, sliced bananas and strawberries, and unsweetened coconut flakes.
