Honestly, I don’t cook fish as often as I would like. Cooking fish terrifies me. I’m never sure if I’m going to overcook or undercook the fish, if the seasonings don’t add enough flavor, or worst of all…the fish tastes fishy. Luckily, when I made this sheet pan soy-mustard salmon + broccolini, the fish was perfectly cooked, seasoning was on point, and absolutely no fishy taste. All my fears of cooking fish dissipated thanks to this sheet pan dish! Now my hubby has requested that I make fish more often – on a sheet pan of course.

Do you want to know what is even better than sheet pan soy-mustard salmon + broccolini for dinner? Eating it cold the next day for lunch. Although, I was extremely disappointed that I didn’t get to finish my left over piece of salmon. Here I was, sitting at the desk in our office with my two little dogs, Mochi and Dolce laying at my feet while I eat my left-over piece of salmon. I’m savoring every bite of the delicate, cold and moist piece of fish, when suddenly my hubby calls. I took the phone and walked out of the room for a second only to come back to the office to find that my dog Dolce had jumped up onto the chair then the desk and devoured all of my salmon. Dolce has confirmed my suspicion proving she is more cat than dog. Boy, she was one happy dog, however momma wasn’t too happy. . Lesson learned…don’t walk away from your food no matter how high away it is from the dogs.
